Grilled Parsnips Flats

 

Recipe: 1 pound parsnips (diced and steamed til tender)
1 medium onion (diced)
1 egg
1 tsp cornstarch
1 can condensed cream of celery soup
2 cans of tuna fish OR Chicken (drained)
Mix parsnips, onion, egg and cornstarch, form into 6 firm balls and flatten em'. Meantime, heat up condensed soup (use half a can of water) and choice of protein. Fry the parsnip flats on grill (you may need to use a fine mesh basket), when done on both sides, place 3 each on a plate and pour the meat gravy over yer flats. Serves 2
