Irish French Fries ![]()
4 small Zucchinis
2 medium or small cucumbers
1 1/2 cup leftover pancake batter
2/3 cup white or yellow cornmeal
Slice vegetables into thin discs, cover in pancake batter, then dip each disc in cornmeal. Fry in cooking oil in skillet/frying pan until golden brown on both sides. Serve with Chili sauce or a sour cream & Horseradish sauce. Serves 5Submitted by: Cindy Merrill
