Hush Puppies

l cup cornmeal

l/2 cup all purpose flour

l/2 cup corn flour

l/4 teaspoon white pepper

l/8 teaspoon dried oregano

l/2 teaspoon black pepper

l/2 teaspoon dried thyme

l tablespoon baking powder

3/4 teaspoon cayenne

l/2 teaspoon salt

l/4 cup green onions, finely chopped

2 teaspoons garlic, minced

2 eggs, beaten

l cup milk

2 tablespoons bacon drippings or unsalted butter

Vegetable oil for frying

Combine all the dry ingredients in a large bowl, breaking up any lumps.  Stir in the green onions and garlic.  Add the eggs and blend well.  In a small sauce pan, bring the milk and bacon drippings (or butter) to a boil; remove from heat and add flour mixture, half at a time.  In a large skillet, heat deep amount of oil.  Drop the batter by tablespoons into the hot oil.  Do not crowd.  Cook until dark golden brown.  Drain on paper towels.
